That is Lechon (Suckling or Roasted Pig). Lechon may be available in Metro Manila but Lechon Cebu is different. And it has to be eaten together with “hanging rice” or “puso rice” which is a rice wrapped in a leaf.
Since his team worked with a client, all of the accommodations and meals were shouldered by them. So whenever they were asked about what they want to eat for lunch, Aljo always answers lechon.
